You should look for radios with VOX (Voice Activated Transmit) and a compatible headset accessory to keep your hands completely free while enjoying the ride. A potential problem is the lack of privacy, which can result in extreme cross-chatter in densely populated areas but out in the country and while cruising on highways, this will not be a problem.

Any recommendations for motorcycle helmet speakers?

I ride with a full face Shoei street helmet (both Syncrotec and a RF1000) and would like to add some sound to my ride with an mp3 player. I have tried many ear bud head phones only to find them trying to tear my ears off when doning and removing helmet so I was wondering if anyone out there could recomend some setups and brands for stereo helmet set ups. Just to clarify I am not looking for intercom, walkie talkie, or microphone setups, just the head phones. Thanks for your help!

First thing to do is check for 'pockets' for the speakers to fit into in the ear ports of the helmet. If there aren't any pockets check for a large enough space to mount the speakers. To be honest I've never had any luck putting speakers I'm about to suggest in helmets that weren't designed to accept them.
